Through the mixing bowl

A popular Swedish "brownie like cake", which is quick and easy to make. Here are the ingredients needed.

100 g of butter
2 1/2 dl of granulated sugar
2 eggs
1 1/2 dl of flour
3 table spoons of cocoa
1 teaspoon vanilla sugar
powdered sugar


Preheat the oven to 175C, but I used 160C with the fan. 
First melt the butter and let the butter cool down.
Next take a bowl and mix together the flour, cocoa and vanilla sugar. In a second bowl mix the eggs and the sugar, stir well.
Take the flour, cocoa and vanilla sugar and stir it into the eggs and sugar mixture, gradually add the melted butter.
Bake the cake for approximately 25 minutes.

(Remember this cake does not rise)
It should have a hard surface and a sticky chewy texture in the middle.

Let the cake cool, then sprinkle the surface with powdered sugar.

And voila the cake is finished and ready to serve as a delicious dessert.

Swedish Scones

Before breakfast this morning I went for a long walk. When I got back I thought there would be nothing yummier to eat for breakfast than freshly baked warm scones.

 This is a simple recipe found on www.scones.se

Here are the ingredients you will need

300 ml of milk
100 g of butter
7-8 dl of flour
4 teaspoons of baking powder
1 teaspoon of salt


Mix the flour, baking powder and salt in a bowl.
Cut the butter into cubes and mix well with your hands into the dry mixture.
Then add the milk and stir until you are able to shape the dough into a form.
Be careful to not over knead it.

Divide the dough into four pieces and flatten them into  round "cake - like" shapes, approximately 12-15 cm in diameter. Cut a cross on the surface and prick the dough several times with a fork.

Place the scone-cakes on baking tray with baking paper, and put them into the preheated oven for about 10 minutes.

Eat whilst they are warm, it's the best. I put cheese and marmalade on mine. :)

Muffins

Today I baked Apple and Cinnamon Muffins with inspiration from a recipe I found on http://allrecipes.com
They were delicious especially when they were still warm.

I used a slightly smaller muffin silicone case. (Silicone cases are a fantastic invention - no more pre greasing tins). These made 12 little muffins or could make 6 large muffins.

Here are the ingredients needed for these yummy little muffins:


  • 190 g all-purpose flour
  • 150 g white sugar
  • 3 g salt
  • 7 g baking powder
  • 2 g ground cinnamon
  • 80 ml vegetable oil
  • 1 egg
  • 80 ml milk
  • 2 apples - peeled, cored and chopped
  •  
  • 100 g white sugar 
  • 40 g all-purpose flour
  • 70 g butter, cubed
  • 3 g ground cinnamon


Preheat the oven to 200C.
In a bowl take all of your dry ingredients, flour, sugar, salt, baking powder and cinnamon and mix them together.
In the recipe it said to chop the apples, which is fine if you like apple texture in your muffins, otherwise you can use a grater. This will also make the batter less clumpy.
Once your apples are grated or chopped mix in the oil, eggs and milk into the bowl with the other ingredients, gradually fold in the apples.

Fill the muffin cups up to 2/3's with the batter.

Take another smaller bowl, and mix the flour, butter, sugar and cinnamon.
This should end up looking like a crumbled mixture. (I reduced the amount of butter that they advised to use on the website - because it ended up being more like a butter spread)
Take a pinch of the "crumble" and sprinkle over the batter in each muffin case.
Starbucks use this crumble on several of their muffins - and of course their famous blueberry muffins :)

I would recommend to place your muffin case onto a baking tray or baking paper, just in case your muffins decide to bubble over the top.
Cleaning up the oven wouldn't be so much fun.

Bake your muffins in the preheated oven for 20 - 25 minutes.
Insert a toothpick into a muffin, if it comes out clean your muffins are ready.
