Ingredients
115g butter
130g peanut butter
220g brown sugar
100g white sugar
2 eggs
2 tablespoons light corn syrup (I used invert sugar)
2 tablespoons water
2 teaspoons vanilla extract
310g flour
1teaspoon baking soda
1/2 teaspoon salt
300g chopped semi sweet chocolate (preferably milk chocolate)
In a large bowl mix the peanut butter, butter, brown sugar and white sugar until smooth.
Then add the eggs one at a time, then add corn syrup, water and vanilla extract.
Add the flour, baking soda and salt and mix into the peanut butter mixture.
Then mix the chocolate into the batter.
Drop tablespoon sizes onto the baking paper leaving a 3 inch gap between them, to give them space to spread.
Bake in a 190C preheated oven for 12 minutes until golden.
Let the cookies cool completely.
